She is currently the Academic Director of the University of Illinois at Urbana-Champaign Food Studies programs in Rome and Director at GLi, Gustolab International Institute for Food Studies in Rome. Since 2008 she has designed, directed and managed more than 40 Food Studies Programs and project based tours in Italy (for the University of Illinois Urbana-Champaign, Hobart Williams Smith Colleges, Chatham University, New York University, New Mexico State University, Bowling Green State University, Edgewood College, Vantan Design Institute, New Haven University, UMass Amherst, Redlands University, OSWEGO SUNY, Auburn University, etc.).
